3 cups of Elderberry Syrup or Sambu®
¼ cup freshly squeezed lemon juice
1 packet of MCP or SureJell pectin
4½ cups white granulated sugar
¼ teaspoon butter
5 or 6 canning jars (8 oz.)
Step 1: In a large pot, combine the Sambu®, lemon juice, and pectin and bring to boil on high heat.
Step 2: Stir in the sugar and butter and bring to a boil again. Watch the pot carefully as the Elderberry jam will begin to foam a great deal. The butter will help keep it from foaming as much, but to prevent it from boiling over the pot, you may need to lower the heat some.
Step 3: As soon as the mixture reaches a boiling point that cannot be reduced by stirring, set a timer for 2 minutes. Then, remove from heat and pour into the jars and let cool.
2 tbsp. Sambu®Guard
8 oz. orange juice
4 oz. organic vanilla yogurt
1 ½ frozen mixed berries
Step 1: In a blender, combine the ingredients and blend until smooth.
Step 2: Stick it in the freezer for breakfast or eat it on-the-go! Makes 2 servings.
Lemon juice or honey (optional)
Step 1: Boil water on the stove in a tea kettle or pot
Step 2: In one cup of water, dilute 2 tablespoons of Sambu®.
Step 3: At your preference, add honey or lemon for taste
